Gourmet Lilydale Chicken Burgers with Guacomole

Ingredients

Burgers
  • 500gLilydale chicken mince
  • 1small white onion, finely chopped
  • 1 cup fresh breadcrumbs
  • 2large cloves garlic, crushed
  • 1egg, lightly beaten
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • salt & ground black pepper
  • non- stick cooking spray
coriander guacamole
  • 1/2ripe medium avocado, peeled and roughly mashed
  • ¼ cup chopped coriander leaves
  • few drops Tobasco sauce, to taste
  • salt, to taste
to serve
  • 4Turkish bread rolls, split
  • 2 cups shredded iceberg lettuce
  • 2tomatoes, sliced
  • tomato chutney

Method

  • .Combine chicken mince, onion, breadcrumbs, garlic, egg, cumin, oregano, salt and pepper in a bowl and mix with hands to combine. Shape into four 11cm diameter burgers. Coat a barbeque hotplate or stove top grill with non-stick cooking spray. Heat to medium – high. Cook burgers for 6 minutes each side or until cooked through.
  • Combine all coriander guacamole ingredients. Toast the rolls and spread bases with coriander guacamole. Top with lettuce, then tomato, burgers and chutney. Top with remaining roll halves. Serve immediately
Notes: Preparation time: 25 minutes
Cooking time: 12 minutes
