Ingredients
Burgers
- 500gLilydale chicken mince
- 1small white onion, finely chopped
- 1 cup fresh breadcrumbs
- 2large cloves garlic, crushed
- 1egg, lightly beaten
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- salt & ground black pepper
- non- stick cooking spray
coriander guacamole
- 1/2ripe medium avocado, peeled and roughly mashed
- ¼ cup chopped coriander leaves
- few drops Tobasco sauce, to taste
- salt, to taste
to serve
- 4Turkish bread rolls, split
- 2 cups shredded iceberg lettuce
- 2tomatoes, sliced
- tomato chutney
Method
- .Combine chicken mince, onion, breadcrumbs, garlic, egg, cumin, oregano, salt and pepper in a bowl and mix with hands to combine. Shape into four 11cm diameter burgers. Coat a barbeque hotplate or stove top grill with non-stick cooking spray. Heat to medium – high. Cook burgers for 6 minutes each side or until cooked through.
- Combine all coriander guacamole ingredients. Toast the rolls and spread bases with coriander guacamole. Top with lettuce, then tomato, burgers and chutney. Top with remaining roll halves. Serve immediately
